These is a very easy vegan nuggets recipe. Just throw the ingredients in a food processor, coat in gluten free cornmeal and fry them in olive oil. They make a great substitution for vegan chicken nuggets. Perfect for dipping in ketchup, mustard or other sauces. They also work great for lunch boxes or picnics.

Ingredients:

  • 1 can (15 oz) pinto beans

  • 1 cup oatmeal

  • ½ cup brown rice, cooked

  • 2 tbsp tomato paste, unsweetened

  • ¼ cup olive oil, plus more for frying

  • 1 tsp salt

  • 3 tbsp cornmeal

Vegan Nuggets

Directions:

  1. Add all ingredients except the cornmeal in a food processor (this one works the best!). Pulse until everything is combined.

  2. Add about 2 tbsp of the bean mixture between your palms. Roll into a ball, then flatten between your hands until you get a nicely shaped nugget. Coat it in the cornmeal. Repeat until the bean mixture is all gone.

  3. Heat a bit of olive oil in a pan (iron skillet works really well for this). Add the nuggets and fry for about 3-4 minutes on medium heat.

  4. Flip over and fry another 3 minutes.
