Red Cabbage Soup

“Mom/Dad what’s for dinner?”, child asks. “Purple soup”, you say! Wait for your child's reaction! :D This is a red cabbage soup! Full of nutrients and full of flavor! Ingredients:

 

  • 2 tbsp avocado oil

  • 1 1/4 cup onion, finely diced

  • 2 cloves garlic

  • 1 1/2 c potatoes, finely diced

  • 6 cups shredded cabbage (about ½ head)

  • 4 cups water

  • 1 tsp salt

  • 1/2 cup coconut cream

Red Cabbage Soup

Directions:

  1. Heat olive oil in a pan on medium heat. Once heated, add onions and saute until lightly browned (6 - 8 minutes).

  2. Add garlic and saute for about 30 seconds. 

  3. Put potatoes, cabbage and water in the pot and bring to a boil.

  4. Cover with a tight lid, lower heat and simmer on low for 20 minutes.

  5. Transfer all vegetables into a blender but reserve about 1 cup of soup liquid (for later) and blend until you have a thick well blended soup. 

  6. Put soup back into the pot, add coconut cream, salt, and reserved soup liquid and give it a stir.

  7. Serve warm.
