This is a sugar free dessert alternative that will satisfy a sweet tooth. Sweetened with dates only which provide a various antioxidants that have a great number of health benefits.

Ingredients:
  • 1 cup walnuts

  • 1 cup almonds

  • 1 ½ cup shredded unsweetened coconut

  • 2 cups soft medjool dates , pitted

  • 1 teaspoon vanilla extract

Nuts-Dates-Balls
Directions:
  1. In a large food processor fitted with an "S" blade, process the walnuts, almonds and 1 cup of shredded coconut until crumbly.

  2. Add in the dates and vanilla and process again until a sticky, uniform batter is formed.

  3. Scoop 1 tablespoon of dough on your hand and roll until a ball forms. Then roll on the rest of the shredded coconut and place on a baking sheet. Repeat until dough is gone.

  4. Eat right away or put in the fridge for about an hour for the balls to harden.


Notes:

Other nuts can be substituted or mixed in with. The combinations are endless. Store in the fridge in an airtight container. It will stay good for several days.
