If you are looking for the healthiest and best tasting fluffy pancakes, you just landed in the right spot! Read on to learn how to make fluffy pancakes that are vegan and delicious. Usually buttermilk is needed to bring out the fluffiness in a pancake batter. This recipe uses soy milk and apple cider vinegar (which on his own has a great amount of health benefits) to create a vegan buttermilk. The combination of this vegan buttermilk and the baking powder create this fluffy pancake recipe. To make this recipe even healthier, whole wheat flour is added. Whole wheat flour has lots of minerals and vitamins including but not limited to B1, B2, B3, B5, B6, Copper, Magnesium, Manganese, Phosphorus, Selenium, Zinc, Protein, Carbs, Fiber and more.

Ingredients:

  • 1 ½  cup soy milk

  • 1 ½ tbsp apple cider vinegar

  • 1 ½ cups whole wheat flour

  • 1 ½ tbsp baking powder

  • 1 tsp salt

  • avocado oil, for frying

Fluffy Whole Wheat Pancakes

Directions:

  1. First make your vegan buttermilk. In a bowl combine the soy milk with vinegar and let it sit for about 5 minutes. 

  2. Meanwhile combine the flour, baking powder and salt in another bowl. Stir until well combined. 

  3. Next pour the vegan buttermilk into your dry mixture and whisk until you get a smooth batter.

  4. Let the batter rest for about 5 mintues. 

  5. Heat 1 tsp of coconut oil in a non stick pan or iron skillet on medium heat.

  6. Once hot, pour about ½ cup of batter on the pan. 

  7. When you see the edges of the pancake turning into a pancake, flip it and cook until golden. 

  8. Repeat until all batter is used up.

  9. Serve warm with favorite toppings. This chocolate mousse goes well with it!
