This is a nutrient dense dairy free sour cream recipe. Canned coconut cream and raw cashews are being used for the cream base. Fresh lemon juice and apple cider vinegar give it a sour zest. Read on to learn how to make vegan sour cream.
½ cup cashews, raw, soaked for 2 hours and drained
1 can (13.5 z or 400 ml) coconut milk, full fat, cream only
3 tbsp lemon juice, fresh
1 tbsp apple cider vinegar
2 tbsp olive oil, melted
¼ tsp onion powder
½ tsp salt
In a blender, combine all ingredients and puree until completely smooth.
Transfer to a container, cover and let it set for at least 24 hours.
