Chana Masala is basically a chickpea tomato stew cooked with onion and a combination of fresh and dried spices. This version of chana masala is very simple and easy to make and done within 25 minutes. It tastes best if it’s served over rice but can be enjoyed by itself as well. You can also choose any other grain (eg. farro, quinoa, …) to go with it and make it a healthy and well balanced meal.

Ingredients:

 

  • 1/4 cup olive oil

  • 1 cup white onion, diced

  • 2 cloves of garlic, minced

  • 2 tablespoons garam masala

  • 2 tablespoons cumin

  • 1 tsp salt

  • 1/8 tsp ginger powder

  • 1 can (28oz) diced tomatoes 

  • 2 cans chickpeas

Chana Masala

Directions:

  1. Heat oil in a pan. 

  2. Once hot, add the onion and saute until golden brown, about 8 minutes. 

  3. Add garlic, garam masala, cumin, salt and ginger powder to it and stir until well combined, for about 1 minute. 

  4. Add can of tomatoes and chickpeas and let it simmer for about 20 minutes.

  5. Best eaten if served with brown rice.
