Cilantro Pesto

Looking for an easy pesto recipe? There it is! A pesto recipe you should print out and have in your kitchen at all times. You will do it over and over again. It’s  a vegan pesto that tastes incredible good with your favorite pasta! This pesto sauce is made out of cilantro and is rich in vitamin C, A and K.

1 - 1 1/2 cups

Ingredients:
  • 2 bunches cilantro, including stems

  • ½ cup walnuts

  • ¼ cup onion, yellow or white

  • ¼ cup olive oil

  • 1 tsp salt

Directions:

  1. Chop the onion into smaller pieces.

  2. Add all ingredients in a food processor and mix until everything is well blended.

  3. Add more olive oil as needed for different consistencies if desired.

Notes:

Goes well with pasta. Simply cook your pasta according to package instructions, drain the water and then add as much pesto as you like. Give it a mix until all pasta is covered with the pesto. Make it a meal by serving it with raw cut up tomatoes, baked or fried tofu and sauteed mushrooms.
